Description

Avoid the fast food track! This vegan cookbook offers recipes for quick, satisfying, healthy lunches that can be taken to work, school or on a picnic. Judy works magic with wholesome foods in an array of scrumptious sandwiches, better burgers, and satisfying spreads as well as succulent salads, delicious dressings, and splendid soups. If planning a luncheon at home, Broccoli-Mushroom Quiche, Mexican Tamale Pie, and Marinated Baked Tofu Nuggets are sure-to-be crowd pleasers. Fun snack ideas, lunches for little tykes, and a menu for a birthday party serve up an array of visually appealing dishes that allow moms to slip in some nutritious fruits and veggies. These plant-based meals highlight the flavor of whole foods prepared lovingly and simply.

The recipes are uninspired (do you really need a recipe for adding things to canned baked beans?), only vaguely lunch-y (and what do I do with 9 servings of lasagna for "lunch"?), and too large when lunch-oriented (I don't need 4 sandwiches, I need 1 or 2). Ingredients can be remarkably vague ("marinated seitan"--marinated in what? will any marinated seitan do or should I be looking for something a bit more specific?).It looks rather like someone had a passable vegetarian cookbook and decided to try to make it fit into a lunchbox. Sadly, it's not a great vegetarian cookbook to begin with and the lunch theme falls apart very quickly.
